Color. Cherry red, and intense garnet background.

Aroma. Spicy and intense, complex aromas of black candied fruit, fine cocoa, toasted wood and mineral nuances.

Palate. Tasty and fleshy, ripe and sweet tannins. Presence of balsamic black fruit, mineral and spicy tones. Long, elegant wine with good persistence.

The grapes are collected manually in boxes of 10/15 Kg of vineyards of the highest places of the Jumilla, between 45-50 years of age, low production transported to the winery with great care, selecting the best grapes prior to the encubado and vinificación.

The fermentation takes place in a period of 8 to 10 days, not exceeding the temperature of 28/30 ºC, the wine remains in contact with the skins in maceration, for a period between 15 and 20 days.

18 months of stay in new cask, 60% French Oak and 40% American Oak.

Red meats, big game, cold roast beef, sirloin with foie sauce or black fruit laminate, goose, roasted lamb, Iberian sausages, various stews, blue cheese, cured sheep and goat cheeses.
